I have been making my own, too, for about 6 months. I'm up to making a little over a gallon every week to ten days. It's so much easier than I expected - basically make tea, cool, add a scoby, cover, and it's all done until ready to drink. And after consuming it daily for a while I really do believe it has helped my digestive system more than any other thing!

So pleased to find the Kombucha information on how to make my own scoby using commercial (store bought) Kombucha. I've been purchasing a commercial brand to drink. Was a little uncomfortable to make the investment in purchasing a scoby to make my own. NOW I will definitely try making it at home! Also, will be following AND READING your site more thoroughly. I just bought a bottle of kombucha and put it in a large jar with a cloth top to exclude light and dust. It formed a mother and produced very well BUT it went off and infected my kefir plant which had been brilliant till then. Will probably get back to water kefir as I think it was easier to deal with. I am in Melbourne Australia so guess where I get it is irrelevant. Good luck with your plant.

Your recipe is the easiest one I have read and I will try it. The instructions I currently have to make it seem very complicated. I have a JUN and Kombucha SCOBY that was given to me several months ago and they were pushed to the back of my fridge and forgotten until I read your article on making kombucha. Are they still ok to use? Thank you so much for sharing information.

I have been taking extreme antibiotics for 3months as directed by a doctor for a combination of maladies and I am totally drained both physically and mentally. I have been looking for something to boost my immune system and my spirit. I will learn more about this and try to make the recipe. I hope this works.

I just moved into my friends house to housesit her two cats. She said to make myself at home. When going thru her kitchen I found a kambucha mother in a half full glass jar. When I sampled it it tasted vinegary. What's the best way to get it started again. Just save the mother and start over or add water and sugar to what's there?
