Is there Poison in your Pickles?

Pickles can be a very healthy snack.  I am a huge fan of cucumbers! I even wrote an article about it. ( 10 Health Benefits to Cucumbers). Pickles are cucumbers that have been preserved.  Pickling is a way of preserving foods for an extended period of time with or without refrigeration.  It is a great way to store food from the Spring/Summer growing season for the winter.  You can pickle just about anything: fruits, veggies, even meats and fish.

I just LOVE pickles! I love the crunchy, salty and vinegar taste!  I grew up eating Clausen's pickles.  I loved every bite of them.  As my consciousness in what I put in my body has developed I began looking into the foods that I include in my life. I went on a little investigation to see what ingredients are in the pickles that I have been consuming my entire life.  I was really surprised to find out that the major brands of pickles contain dangerous ingredients.  This is when I began to make my own pickles. It helps that I have an abundance of them growing in my garden :) 

INGREDIENTS IN PICKLES

Naturally preserved pickles are an asset to any stomach.  Cucumbers only really need vinegar to preserve them and turn them into pickles.  They do not need any of the toxic ingredients that many store bought pickles contain.  Using either a fermentation process or just simply using vinegar provides the pickles with their own health benefits, such as boosting the immune system and creating healthy bacteria for your gut.

Many store bought pickles are not only pasteurized which destroys nutrients but they also contain ingredients that are harmful to the body.

SO what is in your store bought pickles? 

Here is a list of ingredients that I have found in some of the pickles that make up the pickle section at the grocery store.

  • Alum
  • Calcium Chloride
  • High Fructose Corn Syrup 
  • Potassium/Sodium Benzoate 
  • Natural Flavors
  • Polysorbate 80
  • Turmeric Oleoresin 
  • Yellow #5

Alum
This ingredient is a chemical compound added to maintain the firmness of the pickles.  Long term exposure to  Alum can cause problems with the nervous system and increase risk of cancer and brain diseases like Alzheimer's. Alum cause irritation to mucous membranes and upset the balance in the bloodstream.


High Fructose Corn Syrup
High Fructose Corn Syrup is so toxic.  Studies and research has shown that it can cause behavioral problems and reactions similar to those produced by drugs like cocaine.  It also can cause increased weight gain, diabetes and hypertension. Also, most High Fructose Corn Syrup is made from GMO Corn.  

Natural Flavors
These are said to improve the taste of the food. There are 1000's of ingredients that fall under the "Natural Flavor" title. The FDA’s guidelines are, “the essential oil, oleoresin, essence or extractive, protein hydrolysate, distillate, or any product of roasting, heating or enzymolysis, which contains the flavoring constituents derived from a spice, fruit or fruit juice, vegetable or vegetable juice, edible yeast, herb, bark, bud, root, leaf or any other edible portions of a plant, meat, seafood, poultry, eggs, dairy products, or fermentation products thereof, whose primary function in food is flavoring rather than nutritional.”  Natural Flavor might be hidden under ingredients like, natural flavoring, autolyzed yeast extract, textured protein, MSG, etc. There are many convinced that they play a role in neurological disorders.

Polysorbate 80
I found this ingredient listed on many pickle jars.  This is used an emulsifier, helping to prevent the separation of ingredients as it site on the store shelves. Polysorbate 80 has been found to negatively affect the immune system.  It can also cause infertility and other changes to the reproductive system.  This toxic ingredient is often times found in vaccines and ice cream.

Potassium and+ Sodium Benzoate
This ingredients is an artificial color used to make food more visually appetizing.  It is often added to sodas, pickles, olives, jams, dressings and syrups. Testing has shown that sodium benzoate causes sever damage to DNA.  Always check your labels for this ingredient and never consume it

Turmeric Oleoresin 
You might see this on the ingredient list and confuse it for one of the best spices in the world! However Turmeric Oleoresin is made by using volatile solvents for extraction and then concentration to remove the solvent.  Studies have shown that when rats were administered turmeric oleoresin, they developed tumors.  If the label says just Turmeric check in a little further to make sure that it is not Turmeric Oleoresin.

Yellow #5 or Tartrazine
Tartrazine can also be seen on ingredient labels as FD&C yellow 5, E102 or 19140.  This ingredient is added to foods to change the color.  As most dyes have now been proven harmful, Yellow #5 is included.  It has been linked to be connected to ADD/ADHD, anxiety, migranes, vision issues, hives, depression, sleep issues, fatigue, skin rashes and thyroid cancer.  These side effects and allergic reactions are as unnecessary as an ingredient in your food and even being phased out in European countries.

INGREDIENTS: Fresh Cucumbers, Water, Distilled Vinegar, Salt, Contains Less than 2% of Dried Garlic, Calcium Chloride, Sodium Benzoate  (to preserve flavor) Dried Red Peppers, Natural Flavors, Polysorbate 80, Oleoresin Turmeric.

INGREDIENTS: Cucumbers, High Fructose Corn Syrup, Corn Syrup, Distilled Vinegar, Water, Salt, Calcium Chloride, Alum, Natural Flavors, Polysorbate 80. Yellow 5.

MT. OLIVE, KOSHER DILLS

INGREDIENTS: Cucumbers, Water, Vinegar, Salt, High Fructose Corn Syrup, Calcium Chloride, 0.1% Sodium Benzoate  (Preservative), Natural Flavor and Artificial Flavor, Polysorbate 80, and FD&C Yellow 5.

SAFEWAY, SWEET PICKLES

INGREDIENTS: Cucumbers, High Fructose Corn Syrup, Corn Syrup, Vinegar, Water, Salt, Calcium Chloride, Alum, Natural Flavors, Polysorbate 80, Yellow 5.


If you choose to buy store bought pickles look at the ingredients and make sure they don't contain any of the ingredients above.  Look for pickles made with Organic Cucumbers and basic ingredients that you recognize.

   Yet! Making your own pickles takes 4 basic ingredients!!!!

MAKE YOUR OWN PICKLES

There are different ways to make pickles.  This recipe is the most basic recipe.  I am sharing this one because really anyone can make these. It takes 4 basic ingredients. There are other recipes that require more effort and will allow the pickles to store for a longer length of time. There are other methods that require fermentation which turns the pickles into probiotic filled treats.  Whichever way you choose, pickles and their brine are excellent for your health.

 
Simple Pickling Recipe
You will need:
    ( for 1 pint jar of pickles)
  • Organic Pickling Cucumbers (about 3 or 4 pickling cucumbers fills a pint jar)
  • 1 cup Vinegar (Apple Cider Vinegar or White Vinegar)
  • 1 cup Water ( Please use clean water!)
  • 1 Tablespoon Himalayan Rock Salt or Sea Salt
  • Glass Jar
  • Optional: Garlic, Onions, Peppercorns, Dill, Basil, Red Pepper flakes, mustard seeds, etc.

Directions:
  • Cut cucumbers into desired size
  • Pack cucumber slices into glass jar
  • Add the spices , garlic, onions, and herbs if you want
  • Mix the Vinegar and Salt in with the Water (Brine)
  • Pour Brine mixture over cucumbers until they are submerged.
  • Put lids on jar and let cool (the brine will still be warm)
  • Refrigerate
  • Can be eaten after 24 hours and can stay in the refrigerator up to a month
  • The pickle juice can be consumed too and is incredible for you!

Making pickles could not be any easier.  It is really inexpensive too.  I find that when I am making my own foods, it tastes better and feels better going in.  The best part is that I know exactly what is going in the pickles and therefore in my body.   After learning about the harmful ingredients in some of the most popular pickles, I hope that you will think twice before buying and consuming these pickles again and remember to always check the labels!

I'd love to give the pickle recipe a try, I am curious though why it says to let cool after you put the lids on when there is no previous mention of heating anything?

Last night, I picked up some Vlasic Kosher Dill Spears from the local grocer. I read the ingredients and wondered about the polysorbate 80 and yellow#5; so, I did some checking on the net, which led me to your website and several others. One thing's for sure, I'm never buying those pickles ever again! For one thing, it's mislabeled, you can't call something "Kosher" and add toxins to it. Anyway, thanks for showing me how to make my own pickled cucumbers. I like lots of salt; can't get enough.

I find this to be very valuable information and thank you! I am still wondering why I am craving pickles - and no I'm not pregnant - I have been going through a standard size jar in 1 day! And, I'm supposed to be on a low sodium diet! Help!!!!

This is 2017, and if you are still alive after eating all that rock salt, good for you!! Just realize that you are eating a substance that will melt the ice on your frozen concrete driveway, and consider what it is doing to your body. That should help to stop eating it!!

The stuff you put on your driveway is impure, not food grade, and contains sand and other ingredients, which one can assume is bad for you, but calcium chloride is not. Its nothing more than a salt. Sodium chloride is the salt you eat daily, calcium chloride just has calcium instead of sodium. you would have to eat a lot of it to get a negative effect on the body, but then again table salt is also bad for you in large amounts. The tiny amount used in pickling is perfectly safe.

Calcium Chloride does not contain sodium and can be used for pickling sweet foods as well.

I can't find any sweet pickle relish on the market without calcium chloride!! And, the above recipe calls for Himalayan Rock Salt!! This IS calcium chloride!! Why can't we make sweet pickle relish without calcium chloride? If my driveway is frozen, I understand using calcium chloride to de-ice and clean the concrete driveway, but I don't want to put it into my body and injure my cells!

The author says to not use calcium chloride, and then in the recipe calls for Himalayan Rock Salt, which IS CALCIUM CHLORIDE. I understand using calcium chloride - Rock Salt - to de-ice and clean a frozen concrete driveway, but not to eat and injure my body!! But I cannot find any pickle relish on the market that does not contain this harmful ingredient. I made some sweet relish once without it, and it was soggy but at least it won't injure my body!! If anybody uses this recipe, I'd suggest you leave out the Rock Salt and put it on your frozen driveway next winter instead!!!

What I have noticed when eating pickles with Polysorbate 80 and the Benzoates is that my throat and tongue burn, and my throat can begin to get sore, as if developing cold or fly like symptoms, and can trigger a similar response in the swelling of lymph nodes and tonsils in the neck. Aside from that, I find the burning sensation of Polysorbate 80 and the Benzoates and rock salt (Calcium Chloride is rock salt used on the road) completely overpowers the FLAVOR with a burning sensation. I always have experienced these pickles trigger migraines, starting with visual auras occurring anywhere from 1-6 hours later. Finally, Claussen used to make an Off the Vine brand, which did not use dyes, Polysorbate 80 or any Benzoates. It does however have the mysterious "Natural Flavors", irritant "Calcium Chloride", sugars, Lactic and Phosphoric acids (acetic acid = vinegar, and should be the only acid needed). My body tolerated these pickles a lot better, but they still have some questionable ingredients. All you need in pickles in this order, is Cucumbers, Water, Salt (Sodium Chloride, not Calcium or Potassium Chloride). Optionally, you can add vinegar if you don't mind that (some people are scared of acetic acid). Although optional, it is highly recommended to add some herbs and spices such as minced garlic, dill seeds or flower heads, mustard seeds, black pepper corn or slices of colored peppers.

You didn't mention anything about heating, but you did mention to let it cool before refrigerating. So what needs heated? How hot and how long?

Though I do not use calcium chloride in my pickles, it is not a preservative, it is a firmer. It makes pickles crunchy, it is nothing more than a form of salt and from all my research it is perfectly safe and has no effects on the body. Again, all it is is calcium, and chloride, a salt.

Thanks Rob for simplifying the truth here.
It is a food firmer (keeps tomatoes among other things canned from getting mushy). It doesn't mean you want to eat it if you don't, just expect a different product.
I produce clean/clear label products at SuckerPunch Gourmet (ALL GOOD NO GARBAGE)!
Our goal is to have each of our customers understand exactly what is in each product with no paranthetical information (all those ingredients inside ingredients).

Another brand to watch out for is Heinz. I tried their "genuine" pickles recently, only to discover they contain polysorbate 80. Not only that, but they taste TERRIBLE. Spongy texture and soooooo salty, omg. If you've ever tasted an umeboshi plum, they're almost as bad as that. But while umeboshi is healthy for you, these things are definitely not. I swear all these food companies are trying to kill us. Next summer I'm going to hit the farmer's market, see if I can't find some pickling cukes, and buy them out. I've just had it. Thanks for spreading the info as to just how bad "healthy" food can be!

Where are your sources? Are they peer reviewed? Who just believes this bullshit with no real evidence backing it up? "People are convinced" something is toxic. Come on, seriously? That means nothing. I convinced someone that I'm rich, does that mean it's true. Would love to agree with you because of course I want to be healthier but hard facts speak louder than fearmongering.
